The Indian born owner of Piperi Mediterranean Grill, Chef Thomas John, began looking to establish his restaurant’s location in the Boston-market in early 2011. The fast-casual Mediterranean restaurant found a home at One Beacon Street in the Government Center section of downtown and renovations quickly began to turn the old space into an energizing and modern restaurant environment.

Chef John brought in Nichole Carroll, Owner and Interior Designer at Carroll Design Studio in Cambridge, Massachusetts, to bring the Piperi vision to life and create a comfortable Chipotle-inspired eatery. One of the largest challenges Nichole had to overcome when redesigning the site was the existing chipped burnt red and tan ceramic tile flooring. The expense to remove the tile and repair the sub-floor would require sacrificing essential elements of the design. The tile would not function well in the new space and was an acoustical nightmare, so keeping it was not a good option. With a tight budget, Nichole was determined to find a solution that would allow her to install a new flooring option without the need for costly tile removal.

Not only did the flooring product she chose have to install over the existing tile, the product would also have to be durable enough to withstand the high traffic that was hoped for, create a warm and inviting atmosphere, have some sound absorption qualities to minimize noise and be easy to clean. After considering new tile options, Nichole consulted with Mats Inc. representative David Cassady for a flooring solution.
